I have a great saltana buicuit recipe. I made it today and they are yum! It was a 'normal' recipe I converted! Can give u that if u want it, otherwise I will look and bump the thread for u as there have been other cake recipes on here before, especially a yummy choc one that I make into mini muffins for Isla and freeze!
Also the allergy nz recipe book is a good investment- approx $40 for Whitcoulls.

This one is really yummy. I normally make it as muffins. It makes heaps but freezes really well.

Chocolate Cake (Alias "Cocoa Cake")
3 cups flour
1 Tbsp baking powder
6 Tbsp cocoa
2 cups sugar
1 tsp baking soda
1 tsp vanilla
2 Tbsp vinegar
˝ cup cooking oil
2 cups water

1. Sift dry ingredients through twice.
2. Add liquids and mix well.
3. Bake at 170°C in a 20-22 cm round greased tin for 55 minutes or until skewer comes out clean.
Variations:
36 mini muffins (bake for 10-15 minutes)
18 standard muffins (bake for 20 minutes)

DF EF Banana Cake/Loaf

This is a really easy recipe - takes me about 15mins

3 med overripe bananas
1C sugar
1/4 C oil
2 C flour
1tsp baking soda
1 tsp salt

Mash bananas and add oil and sugar. Sift flour, soda and salt together and add to wet mixture.
Optional: add 1 C choc chips / chopped walnuts / coconut / raisins

Fold together, do not beat.

Bake at 190degC for about 55-60mins.
