The slight freezing (even 1 hour is enough) stops the crumbs on the cut sides going all through the icing when you start icing the cake.  Also, if you chill the serving plate along with the cake it is easier to clean up icing spills because they lift straight off!]]>

To cut it is it best to freeze it a bit first?<br />Has anyone tried using a packet cake mix for birthday cakes or is it too soft to cut - I was thinking of the Betty Crocker chocolate cake one.
