It's good 'cause it only takes 10 minutes - and has spinnach, as I'm meat-averse now too, and the bacon in it is as much meat as I can handle right now!  ]]>

I also find it easier to have a salad with whatever I'm eating when we buy that pre-bagged loose leaf lettuce (mescalun), rice doesn't take long, and something simple like crumbed fish fritters that can just be chucked in the oven.
