As they mature over the season, they will tend to shrivel and grow shoots.  The potato's are selected for eating and some are put aside for the purpose of the new growing season, which is around spring.  If you only have a small plot to plant out, you could get a small container such as a 2litre ice cream plastic container and cut some Newspaper strips, you place it in the container with the potato's in.  You then put the container into a dark dry place to encourage the eyes that have come up to sprout its shoots.  The newspaper strips will absorb any moisture stopping rot setting in.]]>
