I make homemade hummus by the bucketload now, so easy and tasty as a snack or addition to a meal.<br />Meals we've had recently, low fat high protein:<br />Homemade falafels - in pita with salad and yoghurt sauce. <br />Chicken frittata.<br />Spicy Bean Enchiladas.<br />Homemade pizzas using wholemeal pita as the base.<br />Stir fry with a little meat, lots of veges, red curry paste and lite coconut milk.<br />]]>

    <![CDATA[<strong>Author:</strong> <a href="https://www.ohbaby.co.nz/forum/member_profile.asp?PF=21854">Mamma2N</a><br /><strong>Subject:</strong> 28072<br /><strong>Posted:</strong> 13 August 2009 at 3:11pm<br /><br />For great inspiration I go to the Cuisine site.. usually don't have all the ingredients on hand but it gives me something to go by <img border="0" src="https://www.ohbaby.co.nz/forum/smileys/smiley2.gif" border="0"> <br /><br />Dh is italian so consequently we have pasta 3-5 times per week..<br /><br />Favourites include - smoked salmon, peas, leeks and cream<br /><br />gorgonzola, marscapone & walnuts - yummo!<br /><br />anchovies, capers, onion, garlic, olive oil<br /><br />olive oil, chilli & garlic - lots of parmigiana!<br /><br />& lots of tomato based pastas - meats in these include sausage (taken out of casings) & tuna.. super quick meals and always go down well <img border="0" src="https://www.ohbaby.co.nz/forum/smileys/smiley2.gif" border="0"> <br />Oh and my favourite MIL makes - cook spinach, let it cool mix with ricotta, S&P.. cook lasagne sheets then spread spinach mixture over lasagne and roll them up - put them in a dish and cover with bechamel sauce & again lots of parmigiana!! Yummo, think I might go make one for dinner <img border="0" src="https://www.ohbaby.co.nz/forum/smileys/smiley1.gif" border="0"> ]]>

You can use all of these together, or just a combination of them. I'd definitely go with the sesame oil, soy sauce and garlic as a minimum though. <br />I always chuck in heaps of veges in my stir-fry - carrots, broccoli, red cabbage, baby corn, mushrooms, spring onion, beans, onion etc... <br /><br />Other ideas for veges: Maybe a roast vege salad - DH does a yum meal which is roast veges (beetroot, carrot, pumpkin, parsnip, yam & kumara) tossed with feta served with a sliced, seared lamb fillet. Mmmm. <br /><br />You can also roast capsicum, courgettes & mushrooms & toss them with a bit of olive oil & balsamic vinegar for a Mediterranean style salad<br /><br />HTH! <br /><br />]]>

I need more ideas though.<br /><br />We do risotto and kebabs, pizza, soup, and those sorts of home made meals occasionally, but more often or not its meat, carb and 3 vege. I'm all good with the meat and the spud/pasta/rice, but how the heck do I spice up the vege? <br /><br />It's either salad, poor stirfry (how do I get that right?), or just plain boiled. I'm getting bored...<br /><br />]]>
