But I got a fantastic tip after I had done all the squeezing.  Just cut them in half and freeze.  Defrost in the microwave and use like a normal lemon.  Thought this might help someone.]]>

Then, holding the lemon open, coat each portion with salt. That helps sharpen the blades (the ice) and the lemon makes it smell nice.<br /><br />And somewhere I've got a yummo recipe for a lemon tart - I'll try and find it for you.]]>

My fav!! YUM:<br /><br />Makes 12 med size muffins<br /><br />2 cups self raising flour<br />3/4 cup sugar<br />75 g butter or margarine<br />1 egg<br />1 cup milk<br />grated rind of 1 large or 2 small lemons <br /><br />Syrup:<br />1/4 cup lemon juice (plus some pulp)<br />1/4 cup sugar<br />pinch mixed spice (for orange muffins if desired)<br /><br />1. Preheat oven to 200°C. Grease or spray the muffin pans<br />2. In a large bowl, sift the flour and add the sugar<br />3. Melt the butter. Beat together the butter, egg, milk and grated rind<br />4. Tip into the dry ingredients and mix gently<br />5. Bake for 15-20 mins or until golden and the muffins spring back when gently pressed with your finger<br />6. While the muffins are baking or at least still hot, mix together the juice and sugar in a saucepan for the topping and boil for a few mins or until slightly reduced.<br />7.
