AnCs mum, I've discovered the same thing! Although the cheap brands of flour dont seem to work as well, pams cocoa is great!

I have a recipe for mug cake that works perfectly

4tbspn plain flour
2tbspn sugar
2tbspn cocoa

mix together in mug

add 1 egg, break the yolk, but dont mix yet

3tbspn milk
3tbspn oil
1/2 tspn vanilla essence

mix all together and microwave on high for 1 min 45s (put a plate underneath JIC mug isnt quite big enough!)

I made it in full, cooked for one min (have a 1200w microwave), mixed it then redid it for another 20s, scraped it out into a bowl, let it sit for 5 mins then added cream... bliss in a bowl! I have done this twice in the past 24 hrs ! With the help of two young kids.
Mine turned out pretty much the same as it was before it was cooked but hot. Maybe I did not cook it long enough or did I? I don't know but it was yummo. I cant wait to try with some fresh cream while its still hot! Made another one for DP with a bit more water and cooked for 50 secs and was slightly better but still dryish ours is 1200

mine is 1400w, did it for 1 min and it turned out purfect. DH cooked it last night too and all the oil bubbled to the top, so he tipped the oil out. Then later found out that it was too dry

We have 800w and DH cooked it for over 2 minutes. I know there is a recipe on here for the 5min mug cake but this is WAY better.

Mug Brownie.

Ingredients:
4 Tablespoons Flour
4 Tablespoons Sugar
2 Tablespoons Cocoa powder (Note: don't use cocoa mix or quik, it shouldn't have any sugar)
2 Tablepsoons Vegetable Oil (Don't use one with a strong flavor, eg olive, sesame, etc)
2 Tablespoons Water
Dash of salt
Mug
Microwave

Add the sugar, flour, cocoa, and salt to the mug and mix. Then add the oil and water and mix the dry and wet ingredients together. Be sure to be thorough, there's a tendency for clumps of the dry ingredients to form

Microwave on high for roughly a minute.
