I have this recipe - somehow I managed to watch the tail end of a Nigella Lawson programme at xmas, and she made this ...

(OK - anyone want to put money on how long it takes Emma to ditch me into the recipe section? Naughty ginger posting in the wrong place ...although technically it wasn't the wrong place per se until you guys asked what I wanted it for ...so it's actually you guys' faults )


In a dessert glass, sprinkle the bottom of the glass with rough chopped dark chocolate.

On top of the chocolate put a couple of tablespoons of chestnut puree (I suppose I could use hazlenut or some such thing if there is anything like that)

Crumble up some meringues and mix these into some whipped cream, and then put a good sized dollop of the whipped cream on top of the chestnut puree and cocolate, and then sprinkle the top with a 'snow dusting' of broken meringues.

Mmmmm.... yummy. If you can't buy any ready-made puree, you can buy whole raw chestnuts from the supermarket.

Boil for about 10 minutes, then fill the pot with cold water. This makes them easier to handle when peeling!
With a small, sharp knife, make an incision at the base and peel off the hard shell. Chuck any that are black (boiled chestnuts should be a similar colour to roasted kumera)

Optional: put the cooked chestnuts into a roasting dish with a little oil, and roast in a preheated 180 degree oven for 15 minutes or so, until the outside is slightly crisp and browned. Lightly salt.

Put your cooked chestnuts into a food processor and blitz until pureed. Add a little oil slowly if necessary to create the appropriate texture.
