These rock! Even if you aint gluten free. I used half and half hazelnut/almond meal (just whizzed them up in the blender from whole), I also used a can of black beans as I didnt have any butter beans (similar consistency) and I rekon some chunks of dark choc would add a nice hit too:
ingredients wet ingredients * 400 gram can butter beans (drained) * 2 eggs * 2 tablespoons oil * 1 teaspoon vanilla essence * 2 tablespoon milk dry ingredients * 1/2 cup cocoa * 150g hazelnut or almond meal * 3/4 cup brown sugar * 1teaspoon baking powder * icing sugar (optional) preparation method 1. Preheat oven to 160 degrees C. Grease and line a slice tin. 2. Blend wet ingredients together and mix well into dry ingredients. 3. Pour into lined slice tin. Bake in preheated ovwn for 25-30 mins. 4. Let cool in pan before slicing. Dust squares with icing sugar |

Wow.... butter beans.... what's that like? Is it a little like having nuts in there?
I use almond meal a lot but hazelnut meal is a great idea!! |
