I needed a recipe for a chocolate cake as I had the honour of baking the birthdy cake for my grandmothers birthday. I wanted to make a really nice chocolate cake that was easy, foolproof and didn't have a lot of outrageous ingredients or cooking chocolate included.

This cake was absolutely delicious and the middle of it looked and tasted like a store bought cake (the outside looked like I decorated it blindfolded with one hand)

2 Cups of flour
3/4 Cup of cocoa powder
2 Cups of sugar
1 tsp of baking powder
2 tsp of baking soda
1 tsp salt

1 Cup of coffee (i used 2-3 teaspoons in a cup of boiling water and chucked that in)
1 Cup of milk
1 Cup of oil (I used olive and the recipe said vegetable)
2 eggs
1 tsp of vanilla essence

Mix all the dry ingredients together, chuck in the oil, coffee, milk, eggs and vanilla, beat really well. I would even suggest using a blender

I baked it at about 180 degrees for 1.5 hours, but I have a gas oven that messes times up, so in a normal oven I would bake for about 45 minutes or until a skewer comes out clean

Mmmm cake. Everyone loved it too!

I made this cake yesterday
When it had finally cooked through the outside was rather crispy and the inside was very rich! I was wondering what everyone else's cakes were like? I cooked it for 1hr 20mins in a regular oven 180oC (when the knife finally came out clean) and I actually think that might have been a bit too hot. Maybe it could have been a bit better cooked at 150oC for 2hrs or something? Also I did 2 and 2/3 teaspoons of coffee in the hot water and that was just a tad too strong!
Great cake though, Hubby loved it!

I only used 1 tsp of espresso coffee (not a huge fan) and it was just enough to bring the flavour of the chocolate out. I think I cooked mine roughly for an hour at about 160 degrees...I found 180 too hot (I checked it half way through and it was already cooked on top but runny inside, so I turned the oven down). And BTW, I sent the cake to DH's work for their morning tea, and someone is going to pay me to make another one for her daughters cake sale (evidently she can't bake!!)

I used self raising and left out the baking soda/powder. If i had plain flour i would use both the powder and soda.

The coffee just enhances the chocolate flavour, you cant really taste the coffee.

If you are making it as muffins you could also top them with a creamy chocolate butter icing.... very naughty

OMG its devine!!!!! It doesnt look the greatest as I had to use fan force and its a bit crooked....but icing will fix that....now what icing to use?????

Yum, yum, Nikki! My favourite icing is chocolate ganache...basically equal quantities of cream and dark chocolate i.e. 250g chocolate and 250ml cream, melt slowly in microwave and let it come to room temperature then pour on and put in fridge to set.

Yum. I made a cake AND 8 muffins. Just had a muffin for breakfast and it was scrumptious. Might have to check for more defects in case I need to eat some more..

I iced it with a cream cheese chocolate icing....basically I started with cream cheese icing (cream cheese, icing sugar and lemon juice) and then thought....nah..not what I want so I melted some dark choc and added that to it....OMFG!!!!!! It was heaven!

Do you need to put coffee in it?
Is there a substitute??

I really really cant stand coffee and can taste the smallest amount of it.

So would love to make this just without coffee, and im not very good with substituting haha.

I don't like coffee either, Aithne, but you really can't taste it in this cake, it just brings out the flavour of the chocolate. I only used 1 teaspoon of instant coffee in a cup of boiling water, but I suppose you could just use boiling water and omit the coffee entirely - the cake just wouldn't taste as rich.

I hate coffee too, and believe me, if you could taste it, I'd pick it up, but you really can't. I'd go with 1 tsp per cup. Its what gives the cake its richness...

Are the measurements you've got here the right amount to ice this cake with? Or would they make a generous amount?

So in a non-fan oven at 180C for 45mins is the right amount of time?
(Just don't wanna stuff it up... am a bit of a baking novice!)

Kriss, I'm sure you could do this in the microwave, probably for around 10 minutes? I make brownies etc in the microwave and they come out great!

I finally made this cake, but made it with egg replacement so that my chocoholic child could have some. It was delicious and you didn't miss the eggs at all in it. This is now on the top of my list for her birthday cake later this month

I have a good recipe that uses jam in it let me know if anyone wants it. I also have a good brownie recipe that is oh so good and rather easy to make too as well as nigellaa lawsons honey bee cake its a chocolate one .

Emma, a bit late I know, but I often sub yoghurt for oil - in a recipe like this I'd use 3/4 cup yogurt and 1/4 oil. Often you cannot tell. Honestly.

Yup, really easy! Because it's so moist and rich it doesn't crumble away when you cut or ice it. As with any cake it's easier still if you make it a day ahead, but if you have less time on your hands and you're worried about it, melt some butter, paint it on and put the cake in the fridge for a while and it gives you a good surface to work from.

(The guitar cake I made for my sister's birthday that I posted in our thread once was this recipe, and I iced it on the same day as making it with a sticky cream cheese icing with no problems at all, and piping on soft frosting is a piece of cake compared to that.)

Wow, nearly two years on and this recipe is STILL a hit.

I couldn't believe it when I made it the first time, and it's SO easy, and no fiddly bits or expensive ingredients like cooking chocolate.

I think I might have to make another one!

I just saw this recipe- this is practically the same chocolate cake recipe I used to make with my mum when I was young (over 25 years ago). She had the recipe from a church cookbook that was given to her when they lived in the US. So glad to see great recipes that stand the test of time

Just pulled mine out of the oven. Sat here and read the list of ingredients and thought " I have all that"!

Very impressed with the outcome but sadly ran out of cocoa so I have to wait till tomorrow to ice it (my waistline is secretly happy about that).

I find for birthday cakes, make a mix of icing sugar and egg white. paint on and leave to dry., creates a "hard" surface to work on to decroate, but the icing later melts into the other (usually butter icing), so isn't yuk.

O.K. I have one obvious recomendation, make sure you put in the Baking soda & Baking Powder. As you can guess mine didn't rise & didn't taste too good & had the consistancy of an oily sponge (a sponge not in a cake sense)!

So... that was a few days ago & now I have a proper one in the oven, luckily I decided to test the cake before making it for my boys 1st B-day!!! Will let you know how it turns out! Trial/ taste testing is usually a fun part of baking but not when it doesn't turn out right!

I am making this tomorrow for DH's bday and wanted to make two to join together with chocolate cream icing. So should I double the mixture of it or it sounds like the mixture is enough for two cakes anyway? I think my tins are around 20-30 cms.

i made this yesterday but changed the recipe a little.

I didnt have enough oil and didnt check before already starting so ended up using 100gms melted butter instead. Also while mixing the dry ingredients i added about a cup or just less of choc chips and i made just a little bit extra then a cup or boiling water with a small teaspoon of coffee.

Honestly it is one of the yummiest cakes i have ever made. Last time i made it with oil and must of used a bit more as it tasted very oily to me.

I keep sneaking back in to have some more

It is even yummier with whipped cream!!

OMG I am so so SO grateful for this thread and this recipie! I was searching all day for a chocolate cake recipie for my son's 2nd birhday cake. I did a trial cake today and this cake is awesome!!! No wonder you have all raved about it. I have done a wiggles car cake and the way the cake comes out it is so easy to work with as it doesn't crumble but is moist and yum in the middle! And so freakin easy to make! Yay!

I've (finally!) made this a couple of times recently - getting a decent-sized cake and 8 cupcakes out of the recipe. We actually prefer the cupcakes to the cake. ;)

I'll tweak it further next time as I don't find it *quite* chocolatey enough - has anyone tried experimenting with melted chocolate in the mix? >.>

Right I just made this cake, a single batch in a 35cm square pan, I cooked it on 180 for 45mins. I greased the bottom with butter but forgot to do the sides. It turned out a bit flat, which I expected, but it also stuck to the pan and crumbled apart when I managed to get it out of the pan. I plan on making this for DS's birthday on Saturday (making it Friday).

ETA - it does taste really yummy tho

If I do a double batch, and line the pan with baking paper, do you think it will come out ok?

I found the tin needs to be lined MrsH23 otherwise it wont come out of the tin.    Well it does .. but its not an easy task!
