As there's a few of you mums with children who have dairy alergies, I thought maybe sharing some recipies would help.

COLLEEN'S APPLE CAKE

Mix and leave to stand:
- 2 large apples, cut
- 1 Tbsp cinnamon
- 2 1/2 Tbsp sugar

Sift together:
- 1 1/2 C flour
- 1 1/2 tsp baking powder
- pinch salt

Make a well in the centre. Add:
- 1 C sugar
- 1/2 C oil
- 1/2 C orange juice
- 1 tsp vanilla
- 2 eggs

Mix to a batter. Pour 1/3 batter into a greased ring tin, then layer with apple mix and so on for 3 batter layers (doesn't matter if there is no apple on top of the last layer).

Bake 45 minutes at 180 degrees.

When baked, pour topping over while still in tin.

Topping: melt together:
- 50g butter/Olivani
- 1 tsp cinnamon
- 2 tsp sugar
