Put into large bowl 3 cups of flour.

Melt in large pot:
8oz butter
3/4 cup golden syrup
1 heaped tsp mixed spice
2 heaped tsp ground ginger
1 cup sugar

Add 2 tsp of baking soda into 1 cup of cold milk.

Stir milk mixture into batter mixture (the stuff u melted) and it will froth.

Make well in flour and pour mixed liquid into it.

Beat/stir until smooth and poor into tin.

Bake slowly for 3/4-1hr.

That's what my recipe says. I usually bake at like 180 degrees and it usually takes longer than that but I guess it would depend on how fat you have it. I miss gingerbread, but I can't have it considering how much butter is in it. Won't be good for the diet hehe

oh Stacey, thank you! that sounds so nice, but I guess I didn't explain myself well enough, I meant gingerbread like gingerbread men gingerbread, not ginger...bread if you get what I mean

mind you, I might just have to make that too cos reading through it again it really does sound very very nice

There is a good recipe in Taste this week and pattern for ginger bread, hang on I will try and find the link for you. I made tree biscuits with the recipe and they are great. bit hard on the teeth though but good gingerbread http://www.taste.co.nz/Home/Features/ReadMore/tabid/168/ArticleID/2225/Default.aspx - House pattern
cant find the recipe on the site tho but it is
Boil 125g butter, 1 cup sugar, and 3/4cup golden syrup in a pan until sugar dissolved.
Sift 3 cups flour, 2 tbsp ginger and 3 tbsp mixed spice into large bowl.
Mix in the melted mixture and then add 1tsp of baking soda to 2 tbsp of milk and add to dough. FForm into dough using spatula (it is very very hot) and cover and put aside for 15 mins
Roll out and cut out into shapes, then bake on lined baking tray for 10-15 mins at 170
Have fun, I made the biscuits with the little girl i was baby sitting on Friday and she had a ball cutting out and icing her biscuits, obviously not the boiling sugar bit

It's enough for a house and left overs for decoration, ie trees, but i got about 30 biggish stars out of it, about 5mm thick

I want to make gingerbread men for Jack's 1st birthday party and was thinking of making them a week or so before and freezing them so I only have to decorate them the day before - take the pressure off. Has anyone frozen gingerbread men successfully?
