How about egg substitute? I picked some up at the supermarket the other day for around $5 for the box.
Failing that I have a good recipe for egg/dairy free banana muffins if your interested? I'm sure you could use it as a cake mix though.

NoEgg is an egg substitute - can also get it at health food shops.

Or if its for today and you cant get any cos everything is shut (!) then try googling for a recipe - there are heaps out there :)

You can also use oil, but I prefer to use Orgran/No Egg and it actually works out cheaper than using real eggs!

Oh oops I forgot to mention the reason we are looking for an egg substitute in cake is because of a strong egg allergy! So egg substitutes that are made of egg white will definitely not do the trick LOL

Oh - and I've used it in the Edmonds banana cake recipe without any worries.  Turns out alright.

what about golden syrup? the egg sbinds the ingrediants and golden syrup can often do the same thing.

We are the same Mum2Lucas. Major egg allergies here. The Ogran No-egg is fantastic. Between that and rice milk I can pretty much make most recipes Sam friendly

Thank you for your suggestions, Mum2Sam can I get Ogran No-egg @ the supermarket or is it something I need to hunt down at a health food store?

I'm heading out to do last minute bday shopping first thing in the morning, if tomorrow is anything like friday was regarding crowds/the mad rush I will scream! I get claustrophobic LOL

I got mine from New World the other day, but have seen it at Foodtown and Pak'n'save. Always in the organic food isles.
Yeah, we are braving the shops in the morning too - we are either really brave or really stupid, I am thinking more likely the later

Hehe yeah its ridiculous how a public holiday can cause so much havoc ....it's not the end of the world if the shops are closing for ONE DAY!
