Hey, does anyone have this edition (with Mary Lambie on the cover)?? I was reading it at the doctors office and found a great recipe for a vegetarian lasagne but was called in before I had time to write it down (OK to rip it out !) and would love to know what it is...it sounded really yummy!
It had spinach, pesto, ricotta cheese and thats about as much as I can remember.

I've got it.
Low Fat Spinach and Sundried Tomato Lasagne
1 pkt fresh lasagne sheets
1 bag baby spinach leaves
250gm low fat ricotta or cottage cheese
1 egg
1/2 cup low fat grated cheese
2 cloves garlic crushed
2 tsp pesto
15 lrge sundried tomatoes drained
1 400ml jar of tomato pasta sauce
2 tbsp grated parmesan
preheat oven to 180
spray 20cm springform cake tin with baking spray
cut lasagne sheet to fit the base
place the spinach, ricotta, egg, grated cheese, crushed garlic and pesto in food processor. Season with salt and pepper and run machine to combine.
divide the mixture and spread a third over the lasagne sheet, top with sundried tomatoes, repeat layers finish with lasagne sheet. Pour over pasta sauce and sprinkle with parmesan cheese.
bake for 25-30 minutes until the filling is set and the cheese melted and golden brown.
Remove from oven and cool in the tin
thats it yum yum
