Hi all,
I am due to help with the cooking for shearing in a couple of weeks. This usually wouldn't be a problem, but my daughter is only 2 months old so I want to get as much as possible done early and freeze it. Then I can make one thing each night, and on the day all I have to do is deliver to the shed. Everything I make will have to be easy to transport & quick to serve. I had though about cassarole for lunch in the slowcooker, made the night before.

I will need to make breakfast, morning tea, lunch and afternoon tea for about 6-8 hungry mouths!
I have already made a double batch of dutch biscuits that I know freeze well.

Any other ideas of meals/baking I can easily make & freeze?
Any ideas of food that keeps well in an airtight container (and how long it would keep for)?

I have taken to cooking big batches of meals and freezing them in seperate portions to take out as we need them (since it's usually just DD and I at home for dinner and DH takes a portion of dinner into work).  I haven't come across anything yet that hasn't frozen well. 

Most food keeps well in the freezer for at least 3 months.

 

If I were you I'd try:

For lunch: Casseroles, curries, soup and shepherds pie mince (top with mashed potato once defrosted).

Morning/afternoon tea: Cookies, sausage rolls, muffins (sweet or savoury)

 

I have a dough recipe for cookies, the dough goes right in the freezer and you defrost as you need it.  I also have a great beef curry recipe for the slow cooker which DH loves!  The other thing that I often do is make up a cheese sauce and freeze it to defrost and use in macaroni cheese or lasagne. 

 

The other thing you can make well in advance, but doesn't need to be frozen, is fruitcake.
