This recipe is kind of an adaptation from one in my Good Housekeeping book...
BISCUIT BASE
1 packet of biscuits
100g butter
3 x bananas
Juice of one lemon
Crush biscuits to make breadcrumbs. Melt butter and stir thru crumbs. Press into a pie plate to form the base.
Slice the bananas and toss thru the the lemon juice. Arrange the banana slices on top of the base.
TOFFEE FILLING
2 cans of condensed milk
200g butter
200g brown sugar
Put condensed milk, sugar and butter into a microwave-safe bowl and stir to combine. The mixure will get very hot so make sure the bowl is strong enough to cope with very high temperatures. Microwave for one minute then whisk briskly. Continue in one minute bursts until the mixture is thick and fudgey. The toffee will continue cooking on standing so underdone is better than over done.
If you don't have a microwave you can do this on the stovetop in a saucepan stirring continuously.
Pour the toffee over the banana/base and refrigerate.
When cooled top with whipped cream and chocolate flakes.

Me neither. I wish I'd never worked out how to make it
Still, it must be good coz I took it to SIL's for lunch the other day and she rang me yesterday for the recipe

You can boil the tins of condensed milk and keep them in the cupboard for a couple of months. I tend to do about 3 tor 4 tins at a time (boil the unopened tin for about 2.5hrs). You then dont need to add the sugar and butter.
I also sometimes put crushed gingernuts through the base - yummy.
And lastly a pinch of instant coffee in the cream.
THIS IS MY FAV DESSERT..... yummy yummy

OK I have printed it, I have ALL the ingredients and now am trying to justify making it for tonight (nothing special, just me and DH - we don't need it!!)
It sounds soooo good!

Yep Kicker, that's the traditional way of making it, boiling the tins for 2 hours. One of our July mums was saying she makes it with caramel condensed milk and just boils it to thicken a bit which sounds even easier.

Yep emma - thats another way of making it easier. All helps when you need an excuse making one
For the base i use digestives.
And bel i would just like to point out that you never need to justify banoffee pie

Thank goodness I am about to go away on holiday tonight and can't make this! Will have to print & keep the recipe for when I get back .. banoffee pie is DH's favourite dessert.

The recipe says digestive biscuits but I just use whatever I have in the cupboard, today it was wine biscuits, but it is also good with malt bickies.

I made this today! OMG. So yummy and piggy!
I used Superwine biscuits.. I reckon it would be good with more bananas. JMHO. It reminded me alot of the Lonestar Pie. Was a big hit in our house

Oooh I made this the other day and it was so yummy!
I used Vanilla Wine biscuits, they were all I had. I made little individual pies by using a muffin tray and they worked fine.
I agree Mel, they need a bit more banana, so i will be adding more next time.

I used more banana the next time I made it too, the first time I just put one layer of banana but with the next one I kind of piled it up, I probably used 6 bananas, and it was much more banana-ey.
