Following on from my "making chocolates" thread, was wondering if anyone has a simple Gingerbread Men recipe?
Going to make these for my friends christmas pressies

oh pick me I made these ones and they were yummy and pretty easy.

125g butter at room temo
1/2c brown sugar
1/2c golden syrup
1 egg seperated
2 1/2c flour
1TBS ginger
1teaspoon mixed spice
1teaspoon baking soda
flour to dust
butter to grease

Icing
1C icing sugar sifted
8 drops red food colour
8 drops green food colour


Method
Preheat to 180, brush two baking trays with melted butter.

Beat butter & sugar together till creamy, add golden syrup and egg yolk, beat then sift in flour, ginger, mixed spice and baking soda.

Turn the mix onto a lightly floured surface and kneed till smooth, press dough into a disc shape, cover with glad wrap and put in the fridge for 1/2hr.

Meanwhile place egg whites in a bowl and beat until soft peaks form, graduly add in the icing sugar until stiff peaks form.

Divide the icing between 3 bowls, add red food colour to one bowl, green to one bowl and leave one bowl white place them in the fridge.

With the dough place it between 2 sheets of baking paper and roll out till it is about 4mm thick, cut out the gingerbread men shapes and place about 3cm apart on the baking trays.

Bake for about 10min

Ice when cool.
