So lots of people have expressed a need to save money this year.

I have been going to the simplesavings website and one idea they had was a debt calendar with some "challenges" for each month/week. So for those of us who want to save money - sign up to take part in MY challenges


Week one: the groceries are an essential part of the weekly expense, but how much do we actually need? The challenge this week is to cut down on the non-essential food we buy. Make a list of the food you already have. Can you make 7 dinner meals from adding only ONE more ingrediant?

LOL - I just read this aloud to my DH and his response was

'sure - if we add bread we can have peanut butter sandwiches, marmite sandwiches, cheese sandwhiches.....'

Not sure if this is a comment on my DH's cooking ability or how very badly we need to go and do the shopping (the cat is in a snit at the moment because we've run out of wet catfood)

Great idea, and thanks heaps lizzle - this is the easy way for us, we don't even have to think of our own challenges!

I'm in, but I have to admit to cheating: we live on a lifestyle block and have a chest freezer that would be big enough to hide several bodies. So we've got a couple of pigs, 10 chickens (which we buy in bulk), about one and a half lambs, and the remnants of half a cow in there. My DH doesn't think he's eaten dinner if he hasn't had any meat, but I've recently gotten him to agree to one vegetarian meal a week (yay). We always cook enough for DH to take leftovers for lunch the next day.

Tonight is roast chook and spuds with a green salad (leafy stuff from the neighbours' patch, we're watering it while they're away; must get my own patch up and running this year).

For the rest of the week: I have some freshly caught and smoked fish in the fridge that's begging to be made into a curried fish pie; I have lots of mince to use up, I'm thinking maybe a lasagne, easy to hide layers of veges in there; a pork stir fry with hokkien noodles; I've got some frozen spinach in the freezer as well so a saag gosht in the crockpot appeals; there's a couple of tins of crab meat that have been hiding in the pantry for months waiting to be made into crab cakes, so I better get onto them, they'd be nice with potato wedges and some of the runner beans we brought back from the in-laws bach, and I think I might go hunting on the healthy food guide website for an inspiring veggie meal with the ingredients I've got.

Another new year's resolution of mine was to only have dessert once a week (money saver and good for the waistline!) so I've got a recipe for lemon self saucing pudding in the crockpot that I want to try out (got free lemons too). I know self saucing pudding is a winter thing but I'm the sort of person that needs to try recipes ASAP once I collect them!

Great idea but what about veges though? I guess if I had some frozen ones that would be ok...

Bobbie - our cats are exactly the same!! We ran out of jimbos yesterday and tried to feed them biscuits and they were not happy hahaha

Sounds do-able especially if you have bbq everynight

Every fortnight we buy a $15 clearance bulk steak pack, a $15 bulk chicken meat pack and a packet of pre-cooked sausages. It lasts us all fortnight and we have bbq almost every night, and I just boil potatoes, or make a salad to have with it. We also add things like an avocado or boiled eggs to vary the meal.
We use the chicken to make things like stir frys or chicken dishes.

Im in for this weeks challenge (esp after today's accident with the CC).

I have also taken the HUGE step of putting the CCs in the freezer to deter the constant ABUSE of them! (another great idea from simplesavers website). I have been a member there for a few months now but nothing eventuated until I received the email with the year planner full of all the challenges.

DH does the cooking in our house and he's really clever at doing that - he'll do an internet search with random ingredients we have and find a recipe that makes something out of them!
