Leftover spag bol for me (if I even feel like it). DH is away & I've temporarily given up cooking while I feel so yuck so no inspiration from me sorry

Ohhhh nachos....*drool*

Im having whatever Grandma is cooking - we're painting her house (easy way to make a few $$) and she feeds us every night Last night I was at home studying though and had tuna and mushroom pasta that I made at home and it was yummy!!!!!!!!!

I am like that when my DH is away (which is a lot of the time) so when he is home I seem to take awhile to get back into domestic goddess mode LOL! When I was pregnant I could hardly cook as I hated the smell of meat cooking.

We are having a roast eye fillet (dont think we will be able to afford those once baby comes lol) with potatoes, pumpkin, peas and gravy... mmmmm. might have some coleslaw too.

I am usually shocking at finding inspiration to cook anything exciting for dinner so the last few weeks I have written up a menu with some recipies to try out. Makes cooking a whole lot easier when I dont have to decide what to cook

DH is going to be home late tonight so I got a chicken subway with tomatoes, lettuce and extra gerkins! How about trying chicken nachoes next time they are quite nice and make a change from mince ones. Just cook up chicken with some onion and I add a El-Paso Mild Salsa sauce mix (from the jar), put chicken on top of corn chips, sprinkle cheese on top and put in oven to grill add a salad and sour cream to the top! Yummy - now I feel like these. I like the idea of writing up a menu for dinner is often in the too hard basket in our house as well. Also have a look at foodinaminute.co.nz - for the Mexicali Lasagne recipe I've made this a couple of times (its a new recipe from them) and it is yummy to.

The menu idea is a great one. I have so many foodie magazines I might go through them and get some ideas then write up a menu and shopping list.

Tonight we're having risotto with bacon, courgettes, mushrooms & loads of freshly grated parmesan mmm mmmm!

I do the menu / shopping list thing every week and find that it works really well.

So far this week we've had:
Sun - Pan-fried salmon fillet with salad and spicey smoked paprika roast potatoes
Mon - Pork fillet with steamed broccoli, peas and garlicy mashed kumara
Tues - Caesar salad with chicken & bacon
Wed - Pasta spirals with chorizo, mushrooms, grilled capsicum, spinach & capers...

Other staples include:
Steak, salad & roast taties
Paella
Lamb fillets with lemon / garlic crushed pea salad
Homemade pizza
Spicy chicken breasts with pilaf and gazpacho sauce (kinda like salsa)
Grilled haloumi, israeli cous cous, green beans & homemade tomato sauce

      we had nachos last night - yummy (even more so as DH cooked )
      Tonight we ate with the girls so DH can go for a run tonight now they are in bed - Chicken in "coat & cook", continental pasta & sauce, carrots and green beans. Yum.

      Mon - stir fry
      Tues - shepherd's pie
      Friday - hell pizza (dh is at the rugby so that is my treat after the little ones are in bed )

      I made gourmet chicken burgers and wedges

      Roasted chicken steaks (bag of tegel ones were cheap)
      Panini
      Mixed lettuce leaves, mayo, red pepper, red onion, avocado, double cream brie and sweet chilli sauce. MMMhmmmm

      Often do roast a beef wrapped in a tin foil parcel with a tin of mush soup and a pkt of onion soup mix (makes a gravy while cooking the meat) slowly roasted. Melt in your mouth moist.

      Pork meatballs (mmmmhmmm)

      Lamb curry/rogan josh

      We eat boring and plain as hubby is very limited in his palette.

      i went out with the girles and had a few wines and a really nice chicken and bacon burger and fries - mmm was so good..

      Tonight might have Thai - DH is fishing till about 9pm

      fattartsrock - I have to laugh at you saying you have plain boring meals because your hubby has a limited palette - if I served the majority of those dinners in our house, DH would be cooking noodles for himself every night How do you do your pork meatballs though???

      Mmm I love reading what other people have for dinner!

      This week we've had
      - Chicken tenderloin tandoori kebabs with yoghurt and couscous salad
      - Lemon chicken, black bean chicken, steamed chinese greens with oyster sauce and steamed rice
      - Pineapple rice with prawns
      - Bangers and mash with peas and gravy

      Last night we had a delish vege stirfry served on couscous. No meat for us cause nothing was defrosted.

      Tonight? I am lost for ideas. Maybe pasta. I am pretty knackered now so something simple is in order.

      And tomorrow night we are having DH's birthday BBQ so there will be a total assortment of food from all walks of life! YUM!

      Last night was chicken pieces with a chilli marinade,mashed spud with cauli, brocoli & carrot in cheese sauce.
      Tonight will probably be creamy bacon, courgette & tomato pasta

      lol what i mean is we have meat and veg most nights and not exciting ones. Although they are home grown, so taste good.
      Mainly its carrots, peas, beans corn. And not mixed either, DH hates mixed vege. Roasted we have spud, pumpkin kumera and parsnip. I like to rast the veges after they have been lightly cooked then tossed in a bit of garlic rice bran oil or oil and garlic and a bit of rast vege sprinke for flavour. DH hates this and prefers just roasted in an inch of oil.

      His fave meals are my least fave. Carrseroles and roast and would have them every night. My one concesison is the roast beef I described in my original post.

      He won't eat anything "tomatoey" or "different" (ie chorizo, sushi, stuffed chicken breast etc) and that rules out mince and pasta bake or my fave lasagne, pasta and tomato and basil and chorizo.

      Pork meat balls? I buy 'em pre made at the butcher! pork mince, onion, spices and pineapple. Can get them in pattie form, which I cook in the griller and have plum sauce on (not dh tho) or as meatballs which I cook in a frying pan slowly to brown then cover in sweet and sour sauce and simmer. Although DH hates sweet and sour, so hardly ever do that.

      Other than that is cops and veg, sos and veg (although I only buy nice sos at the butcher) patties/rissoles/meatballs and veg. Lamb curry or ragan josh and rice (having that tonight) and steak and chips (once a week, lol) same ol' same ol' week in week bloody out!

      What does your DH eat, Kate? sounds stressfull!!!!

      Mmm those pork meatballs sound good, I might have a go at making some. Never thought to put pineapple IN them!

      My DH wasn't a very adventurous eater when we first met (7 years ago). I just keep serving up stuff I like - and if he doesn't like it that's too bad! He's been loads better since we moved to Asia, he always liked asian food and has been game to try anything since we lived in Hong Kong .. Singapore seems really tame now LOL.

      Tonight we having bacon/mushroom cabonara- with ready made sauce from the deli section of supermarket, and fresh pasta- I will cook some brocolli and throw that in too so there is something green! Lol! Bit slack, but hey, its fri!

      Ohhh all those veges!! DH will eat potatoes, mixed veg (only the peas, carrots & corn one though, and I have to make sure he gets very little corn), mushrooms, cauliflower (provided it's in white sauce - not cheese sauce!!) and boiled cabbage. Nothing spicy at all, or too much garlic. He loves the whole casserole/stew thing and roasts - but only with roast potatoes and mixed veges for a roast, and mushrooms, carrots and potatoes in the casserole. Add to the mix that I am lactose intolerant and he hates melted cheese with a vengeance, we have a limited choice!!! He hates sweet and sour or anything like that - he's very old fashioned in his tastes. Meat and three veges and he's satisfied.

      For example, this week we have had...sausages with mashed potato and peas, shepherds pie with beans on the side, they had roast chicken pieces with roast tatoes and mixed veges on Wednesday, and last night was mince with mashed spuds. Not sure what tonight will be. Usually it's toasted sandwiches on a Friday - bacon and egg only.

      I can't put any flavouring on roasts or the veges. If I cook up some extra veges like kumara or yams for me, he'll say he can taste them in the other veges, so now I cook them in a separate dish LOL He doesn't mind tomato based dishes though, which is very good!! I don't really like cooking, so the simpler the better. His favourite meal (which I get heartily sick of) is steak, eggs and chips - he would have chips with everything if he could (baked in the oven). I have managed to get him to eat these yummy chicken breasts that our butcher does which is chicken breast with pesto on the top and then wrapped in bacon - they're sooooo good!!

      So when you think about what a fussy eater he is, plus I can't have dairy products....it's a very limited diet!! And if he doesn't like what I cook, he has 2 Minute Noodles or a pie instead, because I won't cook something separate for him . I love broccolli, spinach, garlic, paprika based dishes...all things he dislikes intently!!

      tonight it's orzo salad with salmon

      just done the groceries - for this week we'll have pork burgers (homemade patties with fennel - yum), pasta with smoked chicken x2, maybe pizza with smoked chicken, thai spicy & sour soup with raw spring rolls, chickpea and tomato soup (will do 2+ meals). Hmmm, looks quite yum actually! I'll have to keep coming back here to remind myself what's for dinner!

      Tonight we having chicken chasseur(sp?) drumsticks with onion and mushrooms in the sauce, steamed veges on the side.
      Caden will have his pumpkin kumara and carrot mix with some of the chicken we have in it

      I might make a apple crumble for pudding as we have HEAPS of apples on the tree, and make custard for the top.

      I dont really like cooking either kate, we have pretty simple meals! lol DH loves mashed potato and mince etc, simple stuff!

      And your DH's are very lucky to have such patient wives - mine gets what is put in front of him (or he cooks what he is told to cook). Lucky he will eat anything!

      But, he will eat most things, even if I have stuffed up, he will still eat it! Like when I didnt cook the rice enough one night, he actually loved it weirdo lol

      Fattartsrock - your beef thing sounds great! i might see if i can convince Dh to try it hes fussy too only eats chicken, sausages and mince.....we tend to have the same things over and over.

      DH and DS are having leftover lasagne, and I'm making a vege lasagne for me, (and so DS and I can have it for lunch tomorrow, and will freeze leftovers) With the remainder of the pumpkin, I'm going to make a roast pumpkin soup to freeze.

      It is sooo easy, cos roast beef can dry out, so this way it stays moist and melt in your mouth, and the soups make an awesome gravy... mmmm ,mouth watering thinking about it!

      ooohhhh all the fussy eaters out there. I don't eat meat or mushrooms (or theres actually a huge list so won't go into it) BUT I tend to do most of the cooking and just throw things together, pasta, mixed vege, chicken and a can of whole peeled tomatoes etc.

      If DP wants some sort of meat then I usually do veges and pasta or salad cook me some chicken and he cooks his steak or what have you.

      Tonight I had chicken kiev, alfredo pasta from a pack and some salad mmm yum! So quick n so easy
