We have a family lunch coming up and I was thinking of getting some lamb out of the freezer and doing something with it. I could of course roast some and serve it cold but that lends itself to sandwiches and that's a bit complicated when I am gluten intolerant. So then I thought, maybe soup? But what part of the lamb would I use for that? A shank? A roast? (I have a whole lamb in the freezer IYGWIM so I can choose whichever part works best.)

I made up a yummy soup last year which used shank but you could also use lamb knuckles.  I'll try and find where I posted the recipe and bump it for you.
