This recipe is a fav of mine, especially on a cold winter night. Very easy and no eggs. If I want it to be a bit more chocolatey I just add a little bit more cocoa to the mixture or a little more to the sauce.
25 gms butter
1/4 cup white sugar
1/2 cup milk
1 cup flour
2 tsp baking powder
1 tlbspn cocoa
Melt butter and add sugar and milk, ( I add milk to the butter and heat it up in the microwave for a few secs so that it doesn't solidify the butter).
Sift flour with baking powder and cocoa
Mix in the butter and sugar mixture.
Put in a dish and on top sprinkle 1/4 cup brown sugar and 2 tsp cocoa. Spoon 2 cups of boiling water on top and bake for approx 40 mins.

Chickaboo your recipe seems pretty similar except for the salt and vanilla essence. Might give it a go tonight, though I am suppose to be staying away from cocoa as it seems to upset Cody's tummy a little.
