4 Eggs
1 cup white sugar
½ teaspoon salt
2 cups milk
1 teaspoon vanilla essence
¼ cup butter
½ cup flour
1 teaspoon baking powder
1 cup desiccated coconut

Place all ingredients together in a food processor and blend until mixed. Pour into a buttered pie dish (25cm). Bake at 180`C for one hour.
When cooked, crust will be at the bottom, egg custard in the middle and coconut on the top.


(It's a soft pudding - the little blokes loved it)

I have made this in the crockpot (out of Robyn Martins cookbook) and highly recommend it.

how do you do it in the crockpot? Im a crockpot newbie sorry! Do you just chuck it all in? sounds too good to be true lol
