So since becoming a SAHM I've become all domesticated and what not, and I've actually started to enjoy cooking. I need more ideas though.

We do risotto and kebabs, pizza, soup, and those sorts of home made meals occasionally, but more often or not its meat, carb and 3 vege. I'm all good with the meat and the spud/pasta/rice, but how the heck do I spice up the vege?

It's either salad, poor stirfry (how do I get that right?), or just plain boiled. I'm getting bored...

Try looking at food blogs. http://smittenkitchen.com/ - Smitten Kitchen is a favourite of mine (she does sweet stuff as well as savoury).

Perhaps you could try doing a night class at one of the high schools before all the funding disappears.

DP did a Moroccan cooking course and loved it!

Mmm veges!

For stir-fry some of the key sauce ingredients are: garlic, sesame oil, fish sauce, soy sauce, maybe some finely chopped fresh ginger, oyster sauce, sweet chilli sauce (or fresh chillis if you prefer). You can use all of these together, or just a combination of them. I'd definitely go with the sesame oil, soy sauce and garlic as a minimum though.
I always chuck in heaps of veges in my stir-fry - carrots, broccoli, red cabbage, baby corn, mushrooms, spring onion, beans, onion etc...

Other ideas for veges: Maybe a roast vege salad - DH does a yum meal which is roast veges (beetroot, carrot, pumpkin, parsnip, yam & kumara) tossed with feta served with a sliced, seared lamb fillet. Mmmm.

You can also roast capsicum, courgettes & mushrooms & toss them with a bit of olive oil & balsamic vinegar for a Mediterranean style salad

For great inspiration I go to the Cuisine site.. usually don't have all the ingredients on hand but it gives me something to go by

Dh is italian so consequently we have pasta 3-5 times per week..

Favourites include - smoked salmon, peas, leeks and cream

gorgonzola, marscapone & walnuts - yummo!

anchovies, capers, onion, garlic, olive oil

olive oil, chilli & garlic - lots of parmigiana!

& lots of tomato based pastas - meats in these include sausage (taken out of casings) & tuna.. super quick meals and always go down well
Oh and my favourite MIL makes - cook spinach, let it cool mix with ricotta, S&P.. cook lasagne sheets then spread spinach mixture over lasagne and roll them up - put them in a dish and cover with bechamel sauce & again lots of parmigiana!! Yummo, think I might go make one for dinner

just read you OP properly, re veges - silly me!

In winter when we have roast veges, we mix them with lots of olive oil, garlic, fresh rosemary & thyme.. yummo!

What about making pumpkin gnocchi - its great! with a basic sauce of butter & sage, really good, time-consuming but worth it

I chop up roast veges in to little bite sized bits and roast them with some seasoning. Serve with some aioli - yum!

I've been doing one pot meals recently - so lots of baby spinach or rocket stirred through pasta or risotto for vege; also a current favourite is sautéed leeks stirred through mashed potato.

Anna, I am drooling at your menu. I think I was Italian in another life. I could solely survive on Italian food and adored it when we were in Italy. LOVED their olive oil on pasta....like our watties tomato sauce ..always on the table

hehe tomato sauce is a bit of a sore point in this house.. when we first got back from Italy, we were at the supermarket and DH asked me to point out where the tomato sauce was.. I didn't think anything of it but that night while he was cooking pasta I walked in right before he was about to throw a whole can in the pan
He was not impressed when I told him to taste it! hehe

Not allowed baked beans & canned spaghetti in the house either
stubborn bugger!

This food blog is my current fav, http://www.101cookbooks.com/ - http://www.101cookbooks.com/ The photos are to die for and the food is healthy and yum. Some of the ingredients might be hard to source but it's worth having a look at anyway as she does heaps of great things for vegetarians (and even non veggies like it )

Yesterday I made the roast banana bread witha couple of additions and it was so good!

We have been having a high protein diet lately and it has given me new inspiration. I make homemade hummus by the bucketload now, so easy and tasty as a snack or addition to a meal.
Meals we've had recently, low fat high protein:
Homemade falafels - in pita with salad and yoghurt sauce.
Chicken frittata.
Spicy Bean Enchiladas.
Homemade pizzas using wholemeal pita as the base.
Stir fry with a little meat, lots of veges, red curry paste and lite coconut milk.

Cheese sauce in vege always goes down a treat, or mum microwaves with chicken stock, cauli, broccoli, pumpkin etc and heats up a can ofsoup think its potato and bacon and that gets served with it
