Here you are Tara.... and anyone else that might be keen

2 C self raising flour
75g Butter
3/4 C sugar
1 egg
1 C milk
Grated rind of 1-2 medium sized lemons

1/4C Lemon Juice
1/4C Sugar

Measure the flour and sugar into a bowl and mix. Melt the butter, add the milk, egg, lemon rind and beat well with a fork to combine. Add to dry ingredients and mix until just combined. Divide the mixture evenly between 12 meduim-sized muffin pans that have been well greased. Bake at 200 degrees for approx 10 min. Stir together the lemon juice and sugar, and drizzle this over the hot muffins as soon as they come out of the oven. Leave to stand for a few minutes, then remove and serve.

These are also very yummy with cream cheese in the centre. I have also substituted orange for the lemon when I haven't had access to lemons - still VERY yummy!!
