OMG its so good, I now have the Cake for Corys birthday...woohoo

125gms butter, softened
3/4 cup sugar
2 eggs (i used 2 heaped tsps of Orgran egg replacer with 4 tblspsn water).
4 mashed ripe bananas
1 teaspoon baking soda
2 tablespoons of hot milk
2 cups flour (I used 2 cups bakels flour (about 330gms), with 67gms orgran gluten replacer)
1 tsp baking powder

Cream butter and sugar until light and fluggly, add the eggs or egg replacer, add in mashed banana and mix well. Heat the milk (about 10secs in the microwave) and mix in teh baking soda, mix into the banana mixture, sift the flour, gluten replacer and baking powder 3 times then add to the mixture and mix well...add more milk as needed to the gt the consistancy you want.

Bake for 15-20 mins at 180

I add white chocolate buttons to the top of the muffins or sprinkle witha bit of castor sugar before baking.
