I am having such trouble eating enough during the day. I keep forgetting to eat and when i get hungry i keep putting off eating. My question is what sort of easy food to you ladies eat during the day? I have no real cooking ability and at the moment have an up and go for breakfast and then a big dinner.

at the moment i'm really into pita bread lightly toasted with a slice of cheese and that flavoured tuna stuff, yummy!
yoghurts are also good and salada crackers with tomatoes, cheese etc. 2 min noodles, pasta snacks, spaghetti/baked beans
i'm sure the other ladies will come up with much yummier things, but those are some of the quick easy lunches i have

I am cooking challenged so rely on my husband to do the cooking but if I'm at home and he's not around I find it easy to heat up a tin of soup...with or without toast, it depends how I'm going for time (try to have it between Alex's sleep).

I'm so big on omelettes right now. and cereal is an "anytime" food too. And can be put in a mug and eaten "on the go".

Wish I had that problem.
you could cook up some chilli mince and put it in the freezer in small servings, then at lunch time you could just microwave a potato top with the mince, cheese and sour cream or potatoes with creamed corn instead.
Toasted sandwhiches are so quick and easy, I have egg or ham and cheese in mine.
cook up some soup and freeze it. Otherwise cheese and crackers are always simple. When I was preggie and on the diabetes diet I had cheese & cracker, youghurt and a piece of fruit.
