Yes another thread. Give me inspiration- what are you having for dinner tonight??
We desperately need to go to the butcher as we only have a little bit of mince, a little bit of chicken and a little bit of beef stirfry.
Was thinking chicken in rice risotto, or a satay chicken stir fry.. Or something...? I dunno.
Can't be bothered going to the supermarket but if someone inspires me enough I might...

Not much inspiration from me, but I think we will be having a bits and pieces dinner as it is supermarket day tomorrow. DP is finishing off some venison and I will be finishing off some vege sausages and homemade minestrone soup. And I guess will have to cook up some veges to go with the meat..
Last night we had vege lasagna.

We're having chicken noodle soup in the crockpot to finish off the chicken carcass from the roast chicken the other night.
Not very inspired.

Not a lot as I forgot to take any meat out of the freezer - be chop chop chicken and mushroom pie at this rate. If I can disguise it in pastry I'm sure DH will go for it.

We are having chicken parmigiana with potatoes and rocket salad.
Satay chicken stirfry sounds yummy, or you could do a chicken salad if you have salad stuff? Or with your stirfry beef try a black pepper beef stirfry, I add a pack of udon noodles (but any noodles would do) carrots, red pepper, Kai lan or bok choy and baby corn and make 200gm beef feed 3 adults :)

We are having satay beef with added onion, carrots, courgettes and maybe some peas and basmati rice. Will probably make garlic bread to go with it for DH.
We have hardly anything left to eat in our house and I hate going grocery shopping its SO expensive!

I have done a beef stew to use up vegs & 1 piece of steak in the slow cooker & will do rice & that is for the kids.
I am doing narchos for DH & me later as the kids don't like them (well 2 out of 3) & there is not enough stew for all.

Sounds like satay chicken stir fry is winning. DH will think I'm wonderful (he LOVES satay haha).
No-one inspired me enough to go to the supermarket.. Really need to go, I hate it though! It always costs soo much!
Probably a good thing, as we got married 3 months ago and I'm only doing thank you cards today- so if someone had inspired me it would have been another way of procrastination..

It's uninspiring, but we came back from our trip south with a carload of pumpkins from DH's Aunty and Uncle. So I'm constructing a random lasagne-type dish with mince, roasted pumpkin cubes, spinach and a yummy cheesy sauce. Who knows what it will end up tasting like!

Do you not have a microwave? just curious cos this is the second time ive seen someone mentioning not getting out meat out early enough
If that was me the family would starve cos ive rarely got meat out early enough.....lol
We had a roast pork for dinner with yummy crunchy roast potatoes, kumara, pumpkin, carrots and crackling...........almost got completely ruined by my son who turned the salt around to the big hole so my broc and cabbage got ruined.......good thing it wasnt anything better that got ruined

Last night we had Tabulli (spelling??) made with quinoa and salad pita pockets with chicken. I have leftovers for lunch today yum can't wait!
Chickielou - If I forget to take meat out I don't like using the microwave to defrost it. If it is mince or sausages I usually defrost it in the sink with warm water.

We don't have a microwave now because we never used it but when we had one I didn't like defrosting in it either. We normally get the meat out the night before, just before bed for dinner the next day and put it in the fridge.

I find the microwave doesn't defrost meat evenly - some bits get cooked before its finished defrosting. Managed to make up left overs for DH and fried rice with egg and mushrooms for me. Pork chops tonight for tea - made sure I got the meat out this time.

I love apricot chicken....but DH isnt a fan!! but i still make him eat it cos its my fav
I prefer not to defrost in microwave for the uneven defrosting part, but if its half way through a day and I know it wont defrost in time i will half defrost it in microwave, just enough so the edges dont get cooked etc. but if im desperate and theres nothing out for dinner etc i will use it.
think im making spaghetti ham and cheese pies in the piemaker for dinner. I generally just use bread instead of pastry, easier and healthier. kinda like a toasted sandwich with lots of filling really

I'm a day late with this thread! Last night we had vege soup. Boring. But Dh likes to cook it once a week so we're not always consuming meat.

ive just put a pepper garlic marinaded beef roast in the oven with some vege - it was on special at the supermarket so hope it tastes alright DP liked it last time tho.
If i forget to take meat out i use the microwave or if its mince or sausages i just boil them a bit first.

Wow thanks for all the nice dinner ideas, Ive been a bit stuck lately!
Just weighing in on the microwave thing, I hate doing it too but since Ive been pregnant I defrost all my meat in the microwave because the food safety brochure I got says don't do it on the bench do it in the microwave or the fridge, and in the fridge it takes ages and I never remember to put it in the night before.
I have found that once the meat is cooked it tastes just the same, it just looks a bit weird when its cooked around the edges at first and not the middle. Better safe than sorry I think

Oh yeah, we still have apricot chicken from last night though. Phew! Might have mashed kumara with it tonight.
ETA - I also add the apricots out of the tin!!!

There's a recipe in the Edmonds cookbook too. And I think Maggi does cook in the pot sachets as well!
I use the juice out of the tin of apricots instead of apricot nectar as I can't find the nectar in the supermarket here. Still good

We had tomato and herb lamb shanks in the slow cooker with mashed spuds and mixed veges.... sigh... I can only fit 4 small-medium shanks in so we only get one each, they are sooo yum though, I always end up wanting more!!!
Tomorrow night is a 'get your own' kind of dinner for the menfolk cos I'm not home Thursday nights hehe Its my one night a week break from cooking since we cant afford takeaways for all of us!
I dont defrost in the microwave either as it leaves it semi cooked on the outside by the time the inside is defrosted... and then by the time the inside is cooked properly, the outside is way overdone... so we get it out the night before, or if we forget, before I take DS to school

I was inspired - today have lamb chops in a rich tomato and red wine sauce in the crockpot. Will probably have them with creamy mashed potatoes and veg.
For those crockpotting, do you brown the meat etc? To me the whole point of a crock pot is that you throw things in and it cooks them for you... have no time to be browning, transferring, doing dishes after.
