Hi guys,

Anyone got YUMMY feijoa recipies as our trees are just at the ripening stage and we have ALOT of them coming, im talking KGs and KGs worth and would love to actually do something with them other than straight eat them....just post below...

My grandmother had a HUGE tree that bore a lot of fruit every year, and every 2nd or 3rd day she'd send one of us kids out to grab any that had fallen, and then she'd peel them, boil them in a light sugar/water solution and bottle them.... stewed feijoas make the yummiest crumbles!!!

Make the banana cake recipe from Edmonds cook book replacing the bananas with fijoas, cook in muffin tins, then freeze them in zip lock bags and the just allow to thaw when u want baking but dont have the time to do it! Great for lunches or when unexpected guests visit!

in banana cake or my hubby just said ...scoop all them out into bowl pour icing sugar over it and put in fridge for mmmm overnight or when there cold...then pour cream over it..............ok he is drooling lol

A friend of mine gave me a feijoa cake recipe which I made yesterday and it was really good!
I'm not sure where she got it from, so I cant really credit anyone but her, but I have included it for you below:

Feijoa Cake

Ingredients:
400g drained feijoa pulp (pushed hard into a sieve- use only the pulp, not the juice)
125 g butter, melted
3/4 raw sugar
1 egg, lightly beaten
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp ground ginger

Mix the dry ingredients all together, except for the sugar.
In another bowl, mis the feijoa pulp, melted butter, sugar and egg together.
Mix all together well. (yum!)
Pour mixture into a cake tin, and bake at 180C for 35-45 mins, or until a skewer inserted into the cake comes out clean. Cool for 10 mins in tin before turning out.

We made feijoa ginger and vanilla jam last year, and the other thing we do heaps is scoop out the flesh into a baking dish, drizzle with honey and pop a couple of bay leaves in there then bake for about 30 min. So good with icecream/yogurt! You can put them in a sterilised jars while hot and they'll keep for ages.
