Good idea about cooking 2 chickens at once!

tomorrow i am making DHs favourite chicken nachos.. we fry up diced chicken in herbs and onion and at the end add in thinly sliced tomato to warm it up.
Layer on top of corn chips which have lettuce scattered over them and then add a little cheese and sour cream on top yum! A much lighter and a wee bit healthier than straight mince and beans and we only need one chicken breast between us

We are having guests over cos we haven't seen them in ages, we usually catch up with them to go drinking on a Saturday night which we obviously haven't done in a while!!!

It's a easy meal that every one always loves when I make it, and it can go for bloody miles!!!!!

Very uninspired tonight... pork chops as we have half a pig in the freezer! With broccoli and silverbeet and either wedges or baked potatoes if DH remembers to bring home potatoes.

I am experimenting and have chicken mince, which I am going to add cheese, onion and some narcho packet mix to, then put it on puff pastry and roll it up like scrolls.

Bit of a dilemma really as I didn't take any meat out of the freezer last night. Might have to see if Dh will make dinner - which envolves him getting his wallet out and paying for takeaways.

That's sounds yummie floss have to let us know how well it goes.

Prawn fried rice with heaps of veggies tonight.

I am trying to be more organised and plan our meals - last night cooked double the rice to have some tonight. Also baked a cake and made yogurt to have for dessert for a few nights. Feeling very domestic goddess-like
