I have some bacon and spinach that I am wanting to use up and thought I'd make some savoury muffins, but I'm having trouble finding anythiing that is dairy free. They all seem to have cheese or sour cream or a huge amount of butter in them.

Does anyone have anything they use?

Switch the butter out for oil, not sure on the cheese maybe make plain muffins & add in the bacon & spinach?

Sorted thanks, I just adapted a recipe I finally found that didn't have too much dairy ingrediants and used oil and soy milk and left out the cheese, They are quite yummy, DH has had 5 already

1 cup plain flour

3/4 cup wholemeal flour

4 Tbsp Caster Sugar (although it probably doesn't need this)

4 1/2 tsp Baking Powder

2 cups Chopped Spinach

1 cup Bacon (cooked)

1/2 tsp Nutmeg

1 egg, lightly beaten

3/4 cup Soy or Rice Milk

1/4 cup Olive Oil

 

1. Preheat oven to 200C. Prepare 12 muffin tins.

2. Sift flour, nutmeg and baking powder in a bowl. Mix in the spinach, sugar and bacon.

3. In another bowl, mix egg, milk and oil.

4. Add liquid ingrediants to dry ones and fold lightly with a fork. Do not over mix.

5. Spoon into muffin tins.

6. Bake for approx 15-20mins or until just starting to brown and a skewer comes out clean.
