I'm sure it's been done before, but I can't be bothered having a search for it, and could be time for a new one anyway.  How about swapping one or two of your great recipes for other busy ladies to enjoy?  I'm thinking it'd be great to share ones that are: good for building up iron; or good healthy meals to freeze before a baby is due (ahhh... already cooked din-dins are such a relief some days - and I haven't even had baby yet!); or just really easy, quick and decent dinners. 

So here's mine:  I call it "spinachey goodness" - I thought a friend had given me the idea from her weight-watchers class, but she tells me I must've made it up!  Good for iron, got 4 magic-healthy ingredients, and can be frozen but it's a bit nicer fresh. 

chop up bacon (chuck the yukky icky bits!) and onion into small pieces and cook in a frypan with a bit of good oil.   Add some chopped or crushed garlic, (and some mushrooms if you like) then a can of chopped tomatoes, then lots of chopped-up spinach.  Heap it over fetuccine, and you've got a yummy healthy dinner. 

Any other ideas, ladies?  I'm hoping to freeze some meals in the upcoming weeks.

I froze lots of leftover mince that we'd make to go with spaghetti bolognaise, and pasta casserole (the Dolmio Pasta Bake sauces are great !),ummmm what else... rice risotto with bacon, frozen mixed veg and fresh mushies chucked in - stuff like that. Eggs on toast is a favorite here too though !

bacon and egg pie is a fave with everyone in this house, and takes hardly any time to make with frozen pastry.

Here's a yummy healthy easy recipe...

Chicken Fajitas
Slice chicken breast or thigh fillets (500g), 2 peppers (red & yellow are nicest), 1 red onion put all into a bowl with juice of 1 lime, 1 tsp chilli (more or less if you wish), 1 tsp oregano. Mix it all up, leave for hour if you have time - not necessary. Fry in wok or pan till peppers & onion caramelise (or burn slightly). Put in burrito type wraps with a bit of sour cream and lettuce. Dinner in less than half an hour.

Enjoy!
