Does anyone have a really yummy cannelloni recipe?  I've tried a few but haven't found the perfect one.  And any ideas for fillings?  I've done spinach and ricotta, or pumpkin and spinach and both are good but am keen for other ideas.

I've tired Jamie Oliver's cauliflower and broccoli filling. I'll dig it out when I get home tonight and post it.
You can use any lasagne filling for cannelloni

Roasted veges.

Just roast some veges such as pumpkin, capsicum, mushroom, red onion, courgette and throw in some whole garlic cloves. When cooked put into a bowl and squeeze out the garlic, let cool. Mix in a tub of ricotta some chopped fresh basil and grated cheese and salt and pepper. Fill the tubes and pour on some nice pasta sauce, (such as grilled vege or something). Top with grated cheese and cook.

I've had a chicken, tomato, cheese, broccoli one which was delicious!

Also had one with kumara, chicken, cheese which was nice too

baked cauliflower and broccoli cannelloni is as follows:

Boil cauliflower and broccoli until cooked, drain.
In saucepan fry olive oil, garlic, thyme and chillies then add the broccoli and cauliflower cook until all tender.
Mash it all together with a potato masher leave to cool.

In the bottom of a baking dish poor in half a jar of passata or chopped tomatoes.

Fill the cannelloni tubes with the broccoli mixture and place on top of passata.

Top with remaining passata.

Mix together tube of creme fraiche, parmesan cheese. Spoon this on top of the tubes and passata.
Sprinkle with more grated parmesan and pieces of mozzarella.

Bake in a moderate oven for 30-40 minutes.

i've made a really yummy chicken and basil pesto canneloni (uses chickenvmince). If you follow the recipe it's not cheap because it includes a whole tub of ricotta, parmesan and a tub of basil pesto in the mixture, then mozerella to go over the pata sauce on top. But you could play around with chicken mince and other wet ingredients to give it the consistency and just use regular cheese on top if you were looking for a cheaper option...
