Whats some good filling combinations for vege quiches?
I usually just throw whatever in but its all very unoriginal so I'm just looking for ideas. Theres loads of meat options out there but that doesn't work for me.

Asparagus is always good in quiche ooo and feta yum!

Sorry to spam ..
But you could do a mexican type one, with beans, tomatoes, salsa .. seasoning.
Ive tried zucchini and goats cheese too.
Another way to make it more filling is to add rice to the filling or potatoes .. pumpkins, something starchy :)

Usually its just spuds and frozen mix vege. Thats why I wanted the ideas

Yum I love quiche!
I add every kind of vege available, or whatever is in my fridge at the time. I also add a cube of vege stock to add flavour.
Also just another idea is I usually cook them in a muffin tray, so they are mini quiches really and I never use pastry. I just bung eveything in a bowl mix it up and pour it in the muffin tray. Really yummy for lunch with a side salad and relish

spinach and (canned) corn. Tomatoes are nice too. Don't forget cheese!

cheese and onion
vege - what ever vege I have on hand - mushrooms, capsicum, broccoli.
grated vege - ie: carrot, pumpkin, courgettes
spinach and feta
corn and asparagus
spud, cheese, mushroom and tomatoes
I always add herbs and/or spices what ever I have depending on the vege - mixed herbs, moroccan spice, curry powder etc

I did one the other day with mashed potatoes, onions, leek, silverbeet, goat feta, parmesan, lemon and parsley. Was so good, and even the monster child ate a whole slice.
