So I work full-time and want to lose some weight over the next few months.

I was just wanting some ideas for meals, particularly lunches that are quick, easy to throw together, and healthy

Any ideas are welcome

Hey MrsMc, check out the Food and Recipes section, I think from memory there are some good healthy recipes there, but you might have to do a search , I haven't looked there for awhile :-)

For lunch I have the same thing every day. Salad. Twice a week I chop up all the veges and put them in containers in the fridge so its really quick to throw together most days. I usually have a boiled egg in mine cause I'm vego and I've m ade up a mixed nut and seed mix that I grab a handful and throw in along with a few crispy noodles.

I don't get bored of the same food so it works for me and takes less than 10 mins to throw together. Would take even less if I didn't do the egg and ate meat.

Good thinking Stacey, do the veges stay fresh enough, or do you mean like twice a week during work days? Do you do sticks of things or grate stuff? And what about the lettuce...do you chop that up as well? I like boring too haha...the less thinking the better.
Assume the veges get put into like tupperware containers...do you put them seperate ones or the same?
Sorry...lots of questions, just sounds like a flippin good plan!

I use those glad containers to store each type of vege, so I have a little stack in my fridge.

Capsicum and lettuce and cucumber stay good chopped up for a few days I've found. If I wanna add carrot I chop that up but have it stored in water otherwise it goes dry.

I don't grate my vege normally, I prefer chopped.

Roast vege salad. Just a bunch of potato, carrot, kumara, courgette, onion, eggplant, pumpkin.

At the start of the week when we have deli meat I make up meat and lettuce rolls/sandwhiches no butter the night before and take them to work each day. On Monday I take in a container of salad veges and keep them at work in the fridge so I can stuff my rolls just before eating them to make them healthier and more filling without having them go soggy. Its seasonal but I usually have a few tomatoes, about 1/4 cucumber, capsicum and a pottle of beetroot slices.

To go with it I take WW muesli bars, fresh fruit and l/f yogurt.

At the end of the week when the cold meat is gone I often make up a brown rice or cous cous salad with either canned beans (chickpeas, kidney beans etc), canned tuna, feta cheese and salad stuff.

Sometimes I keep some vogels in the freezer and take in a tub of cottage cheese and some tomatoes, I just toast the bread, add cottage cheese and sliced tomato, only takes a few minutes and no need to pack lunch each day.

Dinner is typically stews, casseroles or curries done in the crockpot, stir fry, bolognese with extra veges like onion, capscium, courgette, grated carrot in it (not just mince and canned tomatoes), wraps, frittata with salad or the more convential lean meat with salad and veges.

I will try to double batch bolognese and casseroles, and either freeze or take leftovers for lunch.

Also, I do a Sunday night roast with leftovers plated up for Monday night dinner, heat and eat in only 3 minutes per person. I find Monday night dinner a struggle so don't bother any more.
