We are having our DD's 1st birthday party on Saturday and I would like to get some things organised in advance but am not sure how well things would keep or where best to store them. Could anyone offer advice on the following questions -
How far in advance can chocolate brownies be made and can this be reheated before serving?
Could mini cupcakes (yoghurt orange and lemon flavour) be baked without using cases as I the cases I brought won't fit in my silicon mini cupcake trays?
How far in advance could a basic melt and mix rainbow cake be made and also iced/decorated with butter icing and where/how should the decorated cake be stored?
Any advice would be greatly appreciated.

It is usually best to ice the cake the day before, thats what I do. I usually bake cake the week before and freeze it, wrapping it in several layers of glad wrap to prevent freezer burn. then get it out the day before when I ice it. Make sure you cut it to shape before you freeze it. A great tip I got was to put a thin layer of icing on the cake then leave it to dry for a few hours, this layer catches the cake crumbs. Then put a thinker layer on later when you decorate it
