I got given a really cool baking tray with gingerbread men shapes, but I have no idea what recipe to use to make them. Do I make ginger biscuits or gingerbread (like the loaf?) Any ideas or recipes? Thanks!

This is the recipe I use:
2-2 1/2 Cups Flour
1/2 tsp Baking Soda
1 Tbsp Ginger
1 cup Firmly packed Brown Sugar
150g Softened Butter
1 Egg, beaten
1. Preheat oven to 180C. Line 2 baking trays with baking paper.
2. Sift flour, baking soda and ginger together and place in bowl or food processor. Add brown sugar.
3. Add butter and rub in with fingertips, or pulse in food processor until it resembles fine breadcrumbs. Add egg and stir or pulse to mix (if dough seems too sticky, add a little more flour). Wrap in glad wrap and put in fridge for 30mins.
4. Roll out on lightly floured surface until 5mm thick. Cut out shapes and place on tray.
5. Bake for 8-10mins or until golden.

Ohh cool I've been looking of a gingerbread recipe, DD got given some cutters and so last time I just made a shortbread recipe with her, but she knew something wasn't quite right when she ate one

I use popcorns recipe she posted awhile ago:
Boil together 3T golden syrup, 75g sugar, 1 T water, 1 t cinnamon, 1 t mixed spice, 1 t ginger. Then remove from heat, add 75g butter and 1/2 t baking soda. It will froth up a bit and then you add 225g flour. Stir and knead into a ball, its really easy to use
Really soft and easy to make

MamaT I just used your recipe and it's great! I love anything you can just throw in the food processor!! Next time I think I will double the amount of ginger though. I'm a big fan of them being super ginger-y. Hopefully the kids will agree!

Thanks so much for this recipe MamaT, I'm just waiting for the second batch to come out of the oven and I'm eating one of the first batch.. YUM! I had to add a teaspoon of water to the dough afer coming out of the fridge as it was quite crumbly but it's perfect! Thank you

Just a quick tip, use some fresh ginger finely grated as well. Read it on another forum from a women that used to work at Griffins - love their gingernuts!
It worked for me, I'm a big ginger fan too.

Here's the recipe we use:
1 cup golden syrup
100g butter
Ľ teaspoon salt
˝ teaspoon ground ginger
˝ teaspoon cinnamon
1 teaspoon baking soda dissolved in
1 tablespoon boiling water
3 ˝ cups plain flour
Heat oven to 160degrees.
Boil together the butter and golden syrup (a few mins in the microwave till butter melted and starting to bubble) allow to cool a little
Then add salt, ginger, cinnamon and dissolved baking soda, mix well and add the sifted flour.
Combine into biscuit dough, roll out and cut into shapes.
Bake on a lined or lightly greased cold tray for 10 mins approx.

Millemama thanks for the tip! Roughly how much fresh ginger do you add? I'm going to give that a go in my next batch. Just using the dry might explain why gingerbread is never quite gingery enough for me.

Here is the recipe I've used before and they came out quite good, see my notes below as I changed it slightly. Sorry HM, don't have precise measurements for the grated ginger, but knowing me used a couple of tsp of finely grated ginger. Tip: Unless its really fresh its easier to grate ginger if you keep it in the freezer and grate it from frozen. Oh and I found the molasses really made a difference to the authentic taste. See how you go, always after improvements.
Gingernut Biscuits
Ingredients
• 150 g butter
• 250 g sugar
• 1 tablespoon golden syrup
• 1 egg
• 250 g flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda,
• 3 teaspoon ginger
• 1/2 teaspoon cinnamon
Method
Preheat the oven to 180 C.
Mix together butter and sugar until pale and creamy, mix in golden syrup, egg and combined dry ingredients.
Roll into balls and place on cold trays, allowing enough room for biscuits to spread. Do not flatten biscuits. Bake 15 – 20 minutes until rich golden colour.
My Notes:
Lessened the butter to 125g, added grated fresh ginger, used ˝ and ˝ molasses and golden syrup, used all spice instead of cinnamon, added a bit more flour.

Yum Millemama...I've just taste tested the first one out of the oven using roughly your changes to the recipe. They are great!
I used roughly two large teaspoons of grated ginger and a whole Tbsp of molasses and same of golden syrup. I used brown sugar and added around another half cup of flour (and probably could have added more). Oh, and I used the full amount of butter (not sure why...just did!).
This is my new favourite truly gingery gingerbread biscuit recipe. I think I'll use MamaT's recipe (with added fresh ginger) for making shape biscuits and this one for anything else.
