stop my cakes from sinking in the middle...

doesnt matter what shelf of the oven or what temp...all my chocolate cakes are sinking in the middle

my hubby is a baker and we were talking about that the other day after i made a cake... i cant remember what he said but maybe something with the flour? he will be home soon can ask him again if noone has answered you before then.

Just looked it up and its pretty broad. My thoughts would be that you have too much air in your batter. But here are the things that were suggested


- batter over mixed

- too much fat and/or sugar

- not enough liquid

- oven temperature too low

my pavlovas always sink in the middle - i dont bake cakes much tho so cant help sorry...but what maria said sounds right to me.

Could also be that the cake needed baking a little longer....

If you have an older oven cause the temperature may actually be a bit lower than it says (the thermometer expires with time)

I've heard of a good remedy though. Make up a jelly, chop it into pieces, put the jelly in the "hole", and serve it up as special swimming pool cake

hubby reckons it could be underbaked or not enough flour in recipie if it sinks in the middle as well as what other have mentioned.

okay will make another one and just try cooking it a bit longer...and put a bit more flour in it.

made a banana cake and it didnt sink...its only my choco cakes that sink...

Another thing is sure to make your cake sink - opening the oven door when it's cooking. Don't do it!

haha that's funny that one type sinks and others don't. Strange!

yahhhh my second chocolate cake worked...i added 1 tbs extra milk ....cooked it for 35mins...left it in the oven for an extra 10mins (oven off) and its great

and yes please Nikki...any recipe thats easy is always good

baalamb, problem is - how do you convince DH that you must NOT open the oven door when it smells of choccie cake?! I'm sure he doesn't believe me!
