Hellooooo. I bought an air fryer at the beginning of the pandemic because I have a wheat allergy and, since my restaurant is closed, I can't indulge in small munches of fries from the line and I can't go get fast food because of cross contamination. The chicken wings I've made in this thing are the best I've ever made (and ours are RAD.)

I bought a small duck from the Asian market across from the street from my house and thought about cooking it in the air-fryer. It's about 3 lbs (still thawing, with giblets) and will fit in the fryer. My plan was to brine it, dry it off, stuff it with orange rind and garlic, and then do 275 for an hour and then crank it to get the skin crispy.



Thoughts? Suggestions? Warnings? Thanks so much!
