...eggplant?
i need some ideas please on what to do with the lovely big eggplant i brought the other day. someone on here mentioned something about mousaka once? how do i do that? anyone else have any other ideas too?

Moussaka is basically a greek lasagne (originally made with lamb mince) but instead of using pasta you use eggplant. Another idea is eggplant parmigan (sp??) where you crumb slices of eggplant, and fry or (healthier option) bake/grill them til the crumbs golden up, then layer up and top with a tomato sauce and parmesan cheese.
Some Larger eggplants can be bitter so slice them and sprinkle with salt, leave them for about 15mins-half hour in strainer and then pat dry.
Another idea is Ratatouille, which is almost like a vege stew cooked in tomato sauce, made with capsicum, courgettes, onions, eggplant garlic and herbs.
If not sure about making try googling names and that should bring up some recipes.

I made this delicious eggplant and pumpkin curry the other day, I didn't actually have the eggplant lol.. I went to use it and found it wasn't so good anymore, but it tasted great anyway. If you want the recipe, I might be convinced to type it out

Mmmmm Moussaka! My Mums Moussaka is to die for. I remember making eggplant parmigiana to try and induce labour with DD as I had randomly heard somewhere it could help- its ALOT of work but really yummy.
Another simple thing is grilled vege kebabs- chuck chunks of eggplant with capsicum, courgette, onion, mushroom etc on skewers and then grill or BBQ.

Me too! I loooove eggplant but don't get to eat it often coz no one else in my house shares my obsession. Mum makes moussaka when I go to her place tho.
Ratatouille is nice, and super easy to make. And I'd be intrigued to see the pumpkin/eggplant curry recipe, sounds nice!
One of the best pizzas I've ever had was a vege one with sundried tomatoes and slices of eggplant and roasted capsicums....
