Have to take a salad to a BBQ tomorrow and dont know what to make. Guy at hubby's work organising it and just said bring a salad (so can guess almost everyone is going to make a patato salad and a toss salad so need something a bit more orginal.)
Help please?
At the moment I am just thinking of making a quiche.

OK, simple one - get some pasta - like the vereroni (coloured pasta) cook that up. Then make a sauce - 1/4 C of Sugar, 1/4 C Soy Sauce and 1/4 C Oil, lightly heat up so the sugar dissolves. Then if desired put some crushed garlic and ginger (or just garlic). Once dissolved poor over pasta and mix around. You can also add pumpkin or sunflower seeds which have been lightly toasted. This is YUMMMMMMMMMM.

You could do a pasta salad. I cook up spirals thenlet them cool. Then add some mayo, whole kernel corn, some capsicum, whold grain mstard and mix it all up. If I have some I add a bit of ham in as well.

Yeah I normally do a pasta salad too. I put in cucumber, capsicum, cheese, onion, mushroom, corn and if I have them, grapes. Mix it all with the cooked pasta then I mix a bit of milk with mayo and voila! Easy peasy

Roast Beetroot and Feta (always a hit at our BBQs)
Peel fresh beetroot, cube and toss in olive oil and rock salt. Put in roasting dish and roast in oven - normally takes about 25mins....just until nice and soft and slightly crispy.
Toss with fresh rocket and crumbled feta.
Really simple - but really really yummy....just drizzle with a little balsamic! Yummo!!

My family loves my potato salad...
Potatoes cooked till just tender, let cool.
Once cool mix in: Good quality mayo, chopped capsicum (red/yellow) , celery, crispy bacon (chop and cook it till its really crispy - but dont ditch the fat in the bottom of the pan......) ~ use the fat to roast some Pinenuts... DELISH!!!!
The trick is to use a great Mayo. I generally use Real Foods.

These salads all sound delicious. Seems they realised they will end up with just one sort of salad and did a bit more organising. I am stuck on a green salad. Blah. Love it but not much you usually can do with it. So going to go see if I can get some Biltong and feta cheese tomorrow. Should make it a bit more interesting at least.

I don't know if this will work as you are going to the BBQ but I have the yummiest recipe for a salad 'dressing'. You tear the greens in a bowl, mix with some lemon juice, salt and balck pepper and then top with 2 very soft boiled eggs (almost raw) - just squish between your fingers - it's sooo yummy and quite different.
