Following on from Busymums post about the pumpkin, I have a question....

Willie bought a butternut the other day when he was doing the vege shopping. I'm thinking of stuffing it for dinner tomorrow night, but not sure what to stuff it with? Any suggestions? I saw a nice recipe in a magazine once using Borlotti beans, but can't remember what else was in it...

What about with rice or couscous, like a fried rice/stuffing mix with those beans(whatever they are?)

Chickpeas, cheese and spinach mashed with the butternut and a dash of tabasco and baked makes a really yummy stuffing
