I made a couscous salad today for the first ever time and it was delicious. I took it to meet a friend and it was well received there too, so thought i'd share.
I made it with;
Wilted spinach
Cherry tomatoes
Feta
Chorizo
It was so quick and easy and quite filling too. I will definately be making it again.

if you use stock instead of water it gives it a great taste too... but make sure the stock isnt too strong. a nice vege stock is yum.

Mmmmm, I LOVE couscous!
One of my favourites is orange couscous with yogurt, which I saw on the Biggest Loser Australia. Delicious for breakfast.
I also like peppers stuffed with couscous. It's just couscous cooked in a bit of stock, crumbled up feta, onion and tomato all chopped up, mixed together and put in half a yellow pepper. Then bake in the oven til the pepper is soft. Yum!

I make one that has
Couscous cooked in chicken stock, garlic and moroccan seasoning (master foods), then i chuck in, dates, oranges, feta, mint, pine nuts
I also make a tabbuleh type one, 1C couscous, chopped up mint, parsley, tomato, cucumber, red onion, chickpeas, feta

I use the absorbtion method so technically I dont cook it
cous cous cooked in chick or veg stock (sometimes I do half and half) with bacon, onion, garlic, mushroom, red pepper, courgette and peas. YUMMO!
Takes 5 minutes to cook up the veg and boil the kettle then cover it and leave it until you need it.

Floyd loves couscous!! if l'm feeling really lazy he has it with chop chop chicken and peas, he hoovers it and always wants more

Hmm yummo. I love couscous! My fave is Roast Pumpkin and Couscous Salad hmmm.
I definitely agree with the vege stock instead of water, it adds a great flavour.

Another one I do is
Bake red onion chunks and fresh beetroot chunks in oven in a little olive oil, add to couscous with baby spinach, pine nuts, feta, avocado

cous cous is awesome, and a life saver for me - there are so many things I can't eat because of DS's reflux but cous cous doesn't seem to bother him.
I can't do dairy, onions, garlic or spices and a good few green vegies and stock is off the menu but i flavour the cous cous with dried mixed herbs and salt and let it absorb the water, then toss through roasted pumpkin, kumara, mushrooms and potato; acid-free tomatoes, baby spinach and season with salt, pepper, olive oil and a wee dash of balsamic vinegar (which might not be that good for DS but I seem to get away with it.).
