I saw this on campbell live the other night and thought i would try them...and oh boy are they good....and i mean good, (not to give to kids that go hyper on sugar though).
2 egg whites, room temp
120gms castor sugar
pinch salt
tsp vanilla
120gms roughly chopped almonds
150gms choc chips or dark choc, chopped
1. Preheat over to 180c, beat egg whites and salt until foamy
2. Gradually add sugar and continue beating until holds stiff peaks and is glossy (meringue), add vanilla, chocolate and almonds.
3. Line baking tray with baking paper and drop spoonfuls of mixture, put in over, turn oven off, leave for at least 3 hours or over night.
I didnt put almonds in it as they were too expensive, so put a little extra chocolate in them and they are devine.
Makes 16 (using tablespoonfuls)

Because you preheat the oven, put the cookies in, turn off the oven and forget about them

We saw that too, thanks for posting the recipe Kaz!
DH told me I'd be the perfect wife if I made them for him, lol!
Gotta work our way through all the other Christmas treats in the pantry first though!

we decided last night (i only left them for 3 hours, before trying them), that they would be fantastic with whipped cream and raspberries

Am making these tonight!
I make something similar but it has dried apricots in it as well and is made in a big circle and then cooked. We pile cream, berries and choc sauce on top.
Its delicious and I named it yummy torte - don't know its real name.

I've just read the recipe properly - do you think they would work in a gas oven as the temp probably cools down much quicker??

Sally, you might have to leave it on a very low temp for a little while... they're essentially just meringues, and my meringue recipe takes an hour at 140 degrees.
