I am craving mac n cheese right now. But want a better recipe than cook some pasta and add cheese sauce packet mix lol.

Lol!!

I actually went to the supermart and bought macaroni elbows to make it! I did eye up a easy mac box but want to make some from scratch!

I used to buy the blue easy mac boxed stuff all the time!

Make the cheese sauce (from scratch - read the Edmonds cookbook for the basic recipe), boil the mac...fry some chopped bacon, diced onion, (fresh or frozen) corn kernels, mix  it all  together with a couple of chopped tomatoes. Cover with breadcrumbs and grated cheese. Grill til all crusty and yummy on top.

Pretty basic, but a favourite round here...

Cheese sauce - From edmonds cookbook, add an onion when you are melting the butter and let that go clear before adding the flour, add 1/2 t of wholegrain mustard then add milk, cheese etc.
Fry bacon and i also fry some chopped sundreid tomatoes too.
Boil macoroni elbows.
Mix all 2gether and then add cheese on top and bake til crispy.

Yeah I make the cheese sauce from scratch (tbsp flour, dob of butter and milk) then add lots of cheese and milk until you get the consistency you want. I somtimes add a tsp of mustard powder to it as well.
I boil the macaroni, fry up bacon, onion and whatever else you want, then throw it all together and put grated cheese plus breadcrumbs on the top, and throw it in the oven.

I'm the same as the others, basic edmonds cheese sauce recipe then add to it whatever else I feel like. Last night I added cream cheese into the sauce cause I had some in the fridge, man it was yum!

I used to do it the cheese sauce way until I discovered the Holst's crockpot macaroni cheese which is WAY easier (you can do it on the stovetop too).

I don't use the recipe itself any more but here's what I do:

Melt a decent sized knob of butter. Add approx 3-4 cups of pasta (macaroni, penne, spirals...) and stir, then add some garlic salt and a couple of tablespoons of flour. Add 3 cups of grated cheese, then 3 cups boiling water. (If you do it on the stovetop you may need to add a little more water partway through.) Cook, stirring occasionally - in the crockpot it takes 1-2 hours, on the stovetop about 30 mins.

SOooo easy and yum

Also, I've tried it by substituting grated pumpkin in for some of the cheese (you need more pumpkin that you would have cheese - eg 2c pumpkin instead of 1c cheese) and it was extra yum and a good way of getting sneaky veges

I make it like Surfergirl, but don't have corn in it. I hard-boil eggs with the pasta and chop that up and add to the mix.

 

I've been craving Mac n Cheese too, might get some cheese on my way home tonight. YUM

I make like everyone else seems to! With onions in the sauce before you add the flour. We put parmesan cheese into the sauce instead of cheddar though as I find we had to use HEAPS of cheddar cheese in order to taste it but you only need a fraction of the amount of parmesan. We usually put in brocolli and cauli and sometimes carrots too, mixed up with the pasta (we pretty much never use actual macaroni - usually penne and/or spirals!). Then breadcrumbs and some grated (normal) cheese on top. YUM!

Mine is similiar

Melt butter and then add equal amount of flour to a paste add in cheese and milk to consistency of your choice. I use cheddar but add parmesan to so I dont need as much cheddar (we like it really cheesy). I fry up some bacon, garlic and mushrooms and once cooked add to the sauce and let is sit while I cook up the pasta (so the bacon, garlicy flavour can infuse in the cheesy goodness) and toss the pasta through the sauce.

Then I put it in the oven with more cheese on top until golden.

YUM!

Our family recipe is very similar to the others but we don't use breadcrumbs or put in the oven:

Boil macaroni elbows in large saucepan

In the meantime, fry onion, bacon & canned tomatoes all together (brown onion & bacon first).

Also in a small saucepan: mix up a cheese sauce: Melt T of butter, once melted, add 1 T of flour. Take off heat and mix together until a paste. Add 1 cup of milk, or milk/water (add gradually over heat). When you get the consistency you want, add grated cheese to taste.

Drain macaroni and put back in saucepan. Add cheese sauce and mix around. Add onion, bacon & tomatoes to the mix. Bring back to heat and gradually add more grated cheese. Add parmesan and some mozarella (makes it really nice and gooey and stretchy!). Keep going till you get the taste you want.

Take off heat and serve with a sprinkle of parmesan on top!

My Nana used to make the bestest macaroni cheese.

I think her secrets were to add mustard powder to the cheese sauce & to always use tasty cheese. Yummo, now I'm hungry

The crockpot version sounds interesting. Might have to give it a go sometime.
