I have a scrummy recipe but it's not chunky (although you could just not blend it at the end??)
POTATO and LEEK SOUP:
1 leek
2 Tb marg/butter
2 Tb flour
2c milk
4c water
6-8 diced potatoes
2 Tb powdered chicken stock
1 can evaporated milk
- slice leek and cook in butter
- add flour, and while whisking, slowly add the milk and then the water
- add potatoes and stock powder and simmer with the lid on for 20 minutes
- pour in the evaporated milk and heat through
- blend in food processor
