Hi everyone!

I am after a recipe for a vegetable quiche please!

DD and I had one today and it was just mixed veges (onion, peas, corn, carrots, tomato) so was wanting a recipe for it... She loved it!

All in one quiche / frittata

1 1/2 C milk
3 eggs
1 C grated cheese
1/2 C self raising flour
1 tbsp oil
stock powder / salt & pepper / herbs to flavour as required
vegetables - amount and type to personal taste (tomato, onion, broccoli, capsicum, sweetcorn, frozen mixed veges...if anything needs cooking, cook before adding, though frozen mixed veges are usually ok to add uncooked)

Put all ingredients into a bowl and beat together. Pour into greased dish and bake at 170C for 45mins - 1 hour.

I have made this in a flan dish and a smaller, deep dish and it works nicely both ways. I tend to mix the eggs and milk then add everything else after as its easier to mix but its not necessary to do it this way.

Sorry, didnt read the OP carefully enough. A vege quiche without pastry is more like an omelette loaded with veges. Try a search for spanish omelette, that is usually potato and one or two other veges, but as with the one I suggested before, I guess you can add what you want.
