Topic: Ideas for corned beef Posted: 08 February 2007 at 3:48pm |
I made some corned beef last night, and we have some left overs. What can I make with it? I don't like the taste of it by itself.. ideas?

Sandwiches, served cold with salad, or cubed with cooked rice and veges (beans, carrots, etc)...

Thanks, think I'll go with the rice, some kind of stir fry
Don't ask me why I bought it if I don't like it that much lol it's easy to cook and eat over a few days

Cut it up and make fritters ie corn and stuff. That's what my Mum always did with left over corned beef.

That actually sounds quite nice! Might go and pick up some creamed corn from the dairy.. sounds more appealing that rice on this hot day!

Mum makes a pie with corned beef and chicken, basically just those two things plus a can of chopped tomatoes, some branston pickle and some onion in a pastry case. Very tasty!

mmm pie
I ended up making cous cous with bits of feta, tomato, grated courette and corned beef pieces. It was really yummy with some balsamic vinegar.. it was the easiest thing to make in a short amount of time - DP came home for 30 mins then was out again for a meeting tonight

cous cous is good for lots of things like that, sun dried tomatoes chopped up, grated cheese, other veges and meat. Ella actually eats it too! lol

I like it in mac cheese. I use it as a subsitute for bacon in a lot of things, and one of the best things about doing that is that it's low fat.
