anyone have a nice recipe? we like chunky soups but thats not a biggy.

I have a scrummy recipe but it's not chunky (although you could just not blend it at the end??)

POTATO and LEEK SOUP:

1 leek
2 Tb marg/butter
2 Tb flour
2c milk
4c water
6-8 diced potatoes
2 Tb powdered chicken stock
1 can evaporated milk

- slice leek and cook in butter
- add flour, and while whisking, slowly add the milk and then the water
- add potatoes and stock powder and simmer with the lid on for 20 minutes
- pour in the evaporated milk and heat through
- blend in food processor

Enjoy!

We do our similar, but we don't use evaporated milk. If we want it chunky we just don't blend it.

2 leeks
60ml butter
2-3 good sized potatos
3 cups of stock
1/2 cup of milk
salt and pepper
parsley

Thinly slice the leeks and cook till soft in the butter. Add the cubed potatos and cook in the stock till soft. Take off heat and add the milk. Cool, then puree till desired consistancy. Season with Salt and pepper, reheat and add chopped parsley.

Yummy.

*Butter
*Leeks
*Potatoes
*Salt & Pepper
*Stock
*Milk
*Spinach

Slice the leeks and cook in the butter for a few minutes then add peeled and sliced potatoes. Add salt & pepper.
Add the stock/water so it just covers it and boil till potatoes are done.
Add the milk and bring to boil and stir, then blend. You might have to add some more water or milk depending on how thick it is.
Then add the spinach (I use fresh as I find the frozen spinach adds to much water) and blend again.

As a topping I chop and then fry some bacon with some chopped up spring onions in it.

Of course you can do the same without the spinach but I like it as it tastes nice and fluffy and fresh!

Stupid question, but What is evaporated milk??

These recipes sound great. I love a good soup and potatoes are my favourite food

You get evaporated milk in tins.It's next to the condensed milk etc on the shelves in the supermarket.
