This spell of nice weather has got me thinking about yummy summer salads that could be eaten for lunch and was doing some searching online for some ideas.
Also means I might start eating healthily for this pregnancy!
What is your fav summer salad?

Ooo pasta salad!! Just the common diced leftover Xmas ham with tomato, pasta, chives and mayo. Mmm!
Hehe till the sugar/fat/salt cravings kick in!!
Another easy one once tomato's lower in price ($7 something atm OMG!) is diced tomato cubed cheese (any at all) and cubed avocado in about a tsp of mayo or your fav dressing. Yum! Its also really nice if you grate in the cheese instead of cube it

I love a spinich salad with feta, bacon, kumara chips (slice kumara very thinly and bake until crispy) and a dressing of a bit of oil, garlic, ground cumin and corriander, squeeze of lemon juice. Yum Yum!

in one of jamie olivers book there is a smashed tomato and olive recipe - basically squashed cherry tomatoes and olives - suppose you could add some feta - and a nice dressing.

Pasta Salad - Sweet and Sour
2c shell pasta (i use half a bag - can do macaroni or other small pasta - penne and spirals a tad too big)
2 tomatoes (or 3 smaller ones - use it all juice/slush is fine too)
1 chopped onion (very fine as its raw)
1 small green capsicum diced (optional)
1 cucumber diced (optional)
Chop veges, mix with cooked pasta
Sauce (I double this to go with 1/2 bag of pasta):
½c sugar (or slightly less - 1/2C for a doubled recipe is good - can be too sweet for some people)
¼c oil (or slightly less - turns out too slimy when cold if too much is used)
1/3c tomato sauce
¼c wine vinegar
1t paprika
Salt & pepper
Mix together and heat for a few seconds to dissolve sugar.
Pour over veges and pasta
WIll keep in a covered container for 3 days in fridge.

I like to heat it up to eat it but thats my preference as i like the sauce warm but its very yummy cold too.
Its not really a salad as such but its very nice so had to share

DPs mum makes a yummy but oh so fatty one.
1 large carrot (2 small ones) - Grated
1c cheese - grated
1 onion diced finely
1c-ish of finely sliced cabbage
add enough mayonnaise to make to coleslaw consistency
can add things like gherkins, pineapple etc

This is one of my fav salads at the moment , i have it about 2-3 times a week and its so easy to make , i had it with thin sliced chicken breast that i had crumbed the other week and it was devine but any meat is good with it , sausages , steak, fish . i find the mix of pasta and lettuce yummy and the pasta makes it alot more filling
warm roast pumpkin and feta salad
pumpkin
red onion
small pasta spirals or shells
mesclun or spinach leaves
tomato
feta cheese
walnuts or pumpkin seeds ( i use whatever i have in the cupboard - something nutty/seedy just gives it an extra kick)
Roast the pumpkin and onion in a pan in the oven with olive oil for about 20-30min at 180degrees ( i dont alway use onion - depends on my mood) , boil the pasta , then drain and cool, once the pumpkins ready i like to let it cool as well ( so its just warm ) then mix al the ingrediants together. its soooo yummy , i took it to a bbq the other week and it was demolishes very quickly . i dont use all the ingrediants every time , just depends on whats in the cupboard and what i feel like .
Does anyone have a good recipie for a crunchy noodle salad , and also a nice rice slad ?

my 2 favourite salads
(Untitled - Ceasar maybe?)
Cos or Iceberg Lettuce
Hard boiled egg
croutons
grated cheese
baked and shredded chicken breast
mayo
toss together. eat as whole meal.
(or use as a side to a meat, and dont shred the chicken through it)
CousCous Salad
(great for xmas and lots of fam)
CousCous (cook by box instructions and chill in fridge)
chorizto (diced/sliced/circled/cut up however you want)
minit
balsamic vinegar
stir VERY WELL and serve. great for lunches too. one of those 'small' deli size containers is enough for lunch coz its filling.
for lots of people (xmas, new years, family bbq etc)
use
1 box couscous
4-6 chortizo
(then mint and balsamic vinegar as preffered)

My favourite simple salad is:
Some kind of mixed lettuce
Cherry Tomatoes
Avocado
Feta chunks
Slithered almonds (there's special flavoured ones I get)
You could add other stuff too, but that's how I like it
My favourite Pasta salad is:
Spiral pasta
Pesto sauce
Feta
Chorizo sausages chopped up
Sundried tomatoes

i made a nice couscous salad on the weekend. i used vegetable stock instead of water though for the couscous and added salami, basil and roasted asparagus...
