just wondering, do i need to have enough liquid in the pot to cover everything.

i have put some beef in there with some carrots and beans, mushrooms, onions and a pack of rich brown gravy mixed with water ... only it just covers the veges and not the meat...

if i put more water in would that not make it too watery?

I definitely find things way too watery if there's too much in there, so you're right not to add more.

My DH also says less is better with reference to the liquid. He suggests a can of tomato's as well.....

He does all the cooking... I do all the eating :-)
